Cheesy Vegetable Soup (skinny)
In a large pot pour a few tbs of olive oil and set on Medium heat.
Clean, CHOP AND ADD….
1 head cauliflower
2 C broccoli
3 garlic cloves
4 large carrots
1 bag of frozen riced cauliflower ( freezer veggie section)
Sauté these until somewhat tender
1 carton of vegetable broth
1 cup of almond milk (or any milk)
1 C cheddar shredded
1 C shredded mozzarella
Salt and pepper to taste
¼ C almond flour or carbquik (or any flour choice)
Bring to a boil but CONSTANT stirring so doesn’t burn to the bottom……once boiling turn down to simmer and stir a bit more then let set on low for an hour or so.
1 C for a green and ¼ blue (heaping cup- even like 1.5)
