Squash Lasagna


BAKE YOUR SQUASH FIRST ( I made the mistake and did not do this)

Peel your butternut squash

Slice it thin (forms like circles)

Bake in oven until tender- with a little olive oil and some salt and pepper- 425 for I am guessing about 20 minutes …

Chop up a carton of mushrooms

Chop an onion

Chop a handful of spinach

You need one large cottage cheese

¾ cup of shredded mozzerella

1 jar of organic pasta sauce

LAYER : I used a 8 X 8 baking dish

Spray first

Layer of squash

Layer the veggies (I did not cook these first but you could sauté them a bit)

Top with a smidge of olive oil


Then a layer of cottage cheese



Olive oils (tiny bit)


Cottage cheese

Top with mozzarella

Bake 350 for about 30-45 minutes

1/6th of the lasagna

1 green

½ red (cottage cheese)

½ blue

NOTE: you may not even need the mozzarella your call!

So so good!!

And filling
