Easy salad to go!! (Takes some time to make- but super easy to eat on the go!)
My husband is on the road everyday with work- he is getting so sick of sandwiches and cut up veggies- I tried to pack a lettuce salad a few times and it is just not easy or practical for him to take the time to eat. I had a few customers ask me something easy to take to lunch that is healthy too and does not involve a salad! Here is what I came up with- it has Protein- veggies and a few carbs and easy to throw in a tubberwear dish and eat with a spoon…….
Quinoa veggie chicken salad!
1 whole chicken boiled and shredded
2 cups chopped carrots
2 cups chopped celery
1 chopped onion
1 cup small colored peppers chopped
1 packet of Simply organic greek Mediterranean herb dip
2 cups plain greek yogurt
Salt and pepper
2 tbs of olive oil
2 cups cooked quinoa
4 oz Feta crumbled cheese
MIX THE GREEK YOGURT AND THE packet of Mediterranean Herb dip together first….
The hardest part of this is the prep of chopping all the vegetables and cooking and shredding the chicken after this is all done you just throw all of the ingredients in a huge bowl and stir well! Refrigerate and have 1.5 Cups for a GREEN:RED:1/2 Yellow and ½ a blue
** buy organic chicken–buy all your meat organic! Please!! And dairy 😉
***NOTE: this made a HUGE batch — you may want to cut it in half
